Chocolate Mousse

Chocolate Mousse

1 Pd of Chocolate
18 egg yolks
1 cup of sugar
2 cups of warm heavy cream
2 cups of whipped heavy cream

1) Heat Chocolate over double broiler until melted
2) Add 2 cups heated Heavy Cream 1/3 at a time
3) Keep Warm
4) Add Sugar + Egg Yolks beat until stiff peaks set aside
5) Whip 2 Cups of heavy cream
6) Fold Whipped Cream to the chocolate+heavy cream 1/3 at a time
7) Fold beaten yolks and sugar 1/3rd at a time to chocolate+ heavy cream+ Whipped Cream
8) Refrigerate for 2 or more Hours (Preferable over-night)
9) Enjoy
