Cupcakes Recipe

Tiramisu Cupcakes Recipe

Orange Cupcakes

Adapted from “The Afternoon Tea Cookbook”

¾ cup softened butter

½ cup refined sugar

2 tbsp TANG powdered orange juice

Grated zest of ½ lemon & ½ orange

3 whole eggs

1 ½ cups all purpose flour

1 ¼ teaspoon baking powder

¼ teaspoon salt

—-Preheat the oven to 350 F, prepare mini muffin tins lined with baking paper.

— Beat the butter, sugar, powdered orange and zests until creamy then add the eggs one at a time, beating well after each addition.

— In another bowl, sift the flour, baking powder and salt then stir into the butter mixture until well combined. Divide into prepared muffin tins lined with cupcake baking papers. Bake at preheated 350 F oven for 15-20 minutes or until done.

For the frosting:

1 cup butter

2-3 cups confectioners’/ powdered sugar (sifted)

1 tsp finely grated orange zest

Few drops of orange food coloring

— Beat all the ingredients together until combined, use as frosting for the cupcake.
